For those of you wondering what to do with all those turtles you catch, we have the perfect solution for you. Why, it's Momma's Snapping Turtle Stew, of course!! Here is the recipe for you to try: Makes 4 Servings 2 lbs. Snapping turtle meat, trimmed and cut into 1-inch cubes 4 cups seeded chopped tomatoes 4 1/4 cups water, divided 1 cup chopped onions 1/2 teaspoon salt 1/2 teaspoon dried thyme leaves 1/4 teaspoon dried rosemary leaves 1/4 teaspoon pepper 1/4 teaspoon ground nutmeg 1/8 teaspoon ground cloves 1 Tablespoon lemon juice 2 Tablespoons All-Purpose Flour 1/2 cup snipped fresh parsley 1/4 cup dry sherry In 6-quart Dutch oven or stockpot, combine turtle meat, tomatoes, 4 cups water, the onions, salt, thyme, rosemary, pepper, nutmeg, cloves, and lemon juice. Bring to a boil over medium-high heat, stirring occasionally. Reduce heat to low. Simmer, uncovered, for 2 1/4 to 2 1/2 hours, or until meat is tender, stirring occasionally. In small bowl, combine flour and remaining 1/4 cup water. Blend until smooth. Add to stew, stirring constantly, until mixture thickens and bubbles. Just before serving, stir in parsley and sherry. |
